The basket items are as follows:
Cucumbers
Kale/Greens
Fennel Fronds
Green Garlic (this is uncured, just harvested. It has a fresh and mild flavor but must be used within the month)
Onion
Mint
1 dozen eggs
Mint Paratha
Ingredients
½ c mint leaves finely diced
1 c whole wheat flour
1 tbsp oil
½ tsp carom seeds (fine diced fennel fronds as a substitute)
½ tsp chili powder
Salt to taste
Directions
Mix together all ingredients with enough water to form a dough Cut into 6 equal potions and roll into 8” circles Cook in pan with a little oil until golden brown.
Eat with the pickles below. Or a chutney.
Quick Pickles
Ingredients
Cucumbers
1/2 Cider Vinegar
1 tbsp salt
2 dill heads
4 garlic cloves
1 tbsp pickling spice
1 tsp sugar
a pinch red pepper flakes
Directions
Cut cucumbers into spears and place in a pint jar and dill heads and garlic..
Put the vinegar pickling spice sugar and red pepper flakes if desired in a pot. Bring to a boil and then simmer for 5 minutes. Pour into jar to cover cucumbers. Let sit for at least a few days. These will last up to a year in the refrigerator.

What's Happening on the Farm

Summer has peaked and so has the farm! The garden is gorgeous and growing up all it's trellises! The tomatoes are almost touching the top of the high tunnel and are loaded with beautiful green fruits and even more flowers. Any day now we will start seeing the beautiful blushing of the tomatoes!
Henrieka Farm Center welcomed back little farmers this week for the first of our 3 summer camps. This week they are practicing being veterinarians and learning the art of caring for farm animals. Next week we will be exploring the pond and wetlands... One of our most favorite weeks!
The last few weeks I have given you a variety of the herbs we have to offer, some of which are in great abundance. If you are interested in having more herbs to dry or medicinal herbs to dry please ask.... We may have it!
